Intakes, class sizes, entry requirements and what a day at APCA Philippines actually looks like.

Our team of chefs is the largest and strongest pastry chefs’ team in the whole of Asia and the Middle East. Our programs are designed to ensure you learn all the forms and components of pastry, bakery, chocolate, displays and international cuisines. The professional set-up and training makes it a truly international pastry and culinary school.

APCA Philippines is located in a very central location with several hotels, restaurants, shopping malls and entertainment parks nearby — 32nd St. corner C-5 Road, University Parkway District, Treston International College, Bonifacio Global City, Taguig, Philippines. The area is very vibrant, with several local and international educational institutions.

To enrol, fill in the online registration form and submit it — our staff at the academy will contact you as soon as possible. You can also schedule an appointment with the academy, meet our admissions officer and register in person.

The minimum age is 16 years unless stated differently, and there is no maximum age limit. We can organise classes for children on a special request basis. You should have at least a secondary school education and a good command of English, since the medium of instruction is English.

At APCA Philippines we have an international team of chefs. We emphasise a unique teaching and learning environment with smaller classes (1 instructor to 14 students) and a more hands-on approach (80% practical, 20% theory). We use fine-quality, internationally sourced ingredients and our kitchen facilities prioritise the needs of our students.

There will be a maximum of 14 students in a class at any given time. This way we can ensure our instructors give you the best guidance and supervision according to your personal needs.

Depending on the topic, there will be recipes you work on by yourself and others you work on in teams.

Your entire schedule is pre-planned on a monthly and weekly basis, so you always know what you will be doing next week. Class starts at 9am with a short morning briefing, after which you watch the instructing pastry chef demonstrate what needs to be done, while the kitchen assistants prepare your mise en place.

You then make the same products on your own table under the instructing chef’s guidance. Depending on your schedule you will make one or more products daily. Class ends at 4.30pm and you are responsible for cleaning up after yourself. At 5pm your day at the academy comes to an end.

Although at APCA Philippines we focus on hands-on teaching, theory plays an important part in your training. 80% of your time is spent in the kitchen training hands-on and 20% in the classroom learning the theory basics.
